High-Protein Cottage Cheese Bread

This loaf is naturally dense and toasts well.

Ingredients:

5 quality eggs, mine are from The Food Farm and are pasture raised and organic

500g of cottage cheese, I use Barambah Organic cottage cheese

450 g of gluten-tested oats, mine are from Part & Parcel code reneelynch-20 for discount

2 tsp salt

1 tsp baking powder

2 Tbsp each of pumpkin seeds and sunflower seeds

2 Tbsp flaxseeds

Method:

  1. Pre-heat the oven to 180°C.

  2. Blitz your oats into a flour using a high speed blender or Thermomix.

  3. Add eggs, salt, baking powder and cottage cheese and blend to combine.

  4. Add seeds and mix on a lower setting. Pour into a lined loaf tin.

  5. Bake your high protein bread for 60 minutes, then take it out of the oven and let it cool before slicing.
