Gluten-Free Flourless Sweet Potato Chocolate Muffins

If you love rich, fudgy chocolate muffins but want something a little more nourishing, these Flourless Chocolate Sweet Potato Muffins are about to become your new favourite treat! They’re packed with wholesome ingredients, naturally gluten-free, and made without refined flour—yet still incredibly soft, moist, and chocolatey.

The secret ingredient? Sweet potatoes! Not only do they add natural sweetness and a velvety texture, but they’re also loaded with fibre, vitamins, and slow-digesting carbs to keep you feeling satisfied. These have saved me when my youngest wakes early in the morning and is hungry before breakfast time, they also make a delicious afternoon snack.

Ingredients

  • 1/2 cup of cooked and mashed sweet potato

  • 1 cup smooth unsweetened peanut butter

  • 3 eggs1/2 tsp baking powder

  • 1/3 cup maple syrup

  • 3 Tbsp cocoa or cacao

  • 1 tsp vanilla

  • 1/2 tsp cinnamon

  • 1/4 tsp sea salt

  • 70-85% dark chocolate to decorate

Method

  1. Preheat the oven to 180 degrees C.

  2. Grease or line a muffin tin.

  3. Combine all ingredients, except the chocolate, in a food processor and blend.

  4. Scoop even portions into the lined muffin tray.

  5. Top each muffin with half a piece of chocolate.

  6. Bake for 17 to 19 minutes.

  7. Let them cool for 15 minutes before enjoying.
