Giant Protein Cookie

This giant, one-bowl chocolate chip cookie is a little bit of fun and tastes delicious if you’re looking for a high-protein snack.

I have tested this with whey protein isolate and a half/half blend of whey and casein, both worked a treat.

Technically one serve, this is big enough to share.

Ingredients

1 scoop of whey protein isolate

2 Tbsp almond butter

2 Tbsp maple syrup

1/4 cup Chobani Light Greek Yoghurt

1 tsp baking powder

1 tso ground ginger

70-85% Dark chocolate - I chop up a block for chunky choc chips. Measure with your heart.

Method

Preheat oven to 180 degrees celsius. Mix all ingredients into a bowl and then stir through the chocolate. Line a tray with baking paper. Spread cookie dough into a large circle and sprinkle with flaky sea salt. Bake for 8-10 minutes, you want it slightly under baked for a chew cookie consistency. Allow it to cool for 20-30 minutes.
