Ingredients

1kg of chicken mince

1/4 tsp black pepper

1/2 tsp ground cumin

1/2 tsp ground oregano

1/2 tsp red pepper flakes

1/4 cup fresh dill, chopped

1/4 cup fresh mint, chopped

1/4 cup finely diced red onion

2 cloves garlic, finely minced

1/2 teaspoon lemon zest

2 Tbsp of psyllium husks

1/2 cup of green olives

1 teaspoon salt

Optional: 1 Tbsp honey

Method

Mix all of the meatball ingredients together in a bowl. Use your hands to ensure it is all combined. Divide into desired size and place onto a lined baking tray or use stainless steel. Drizzle with olive oil and bake at 200 degrees C for 15-20 minutes. Alternatively pan fry until golden and cooked through.
