Sweet Potato Peanut Butter Swirl Brownies
Ingredients
1 medium sweet potato - 2-3 cups grated
2 whole eggs
½ cup coconut oil, melted
1/4-1/3 cup honey/maple
1 tsp pure vanilla extract
½ cup raw cacao powder
1 teaspoon baking powder
1 teaspoon baking soda
2.5 Tbsp coconut flour
100g 85-90% Lindt Chocolate
1/4 cup smooth peanut butter (I used Ridiculously Good Peanut Butter)
Method
Preheat oven to 180 degrees celsius.
Mix wet ingredients together, add baking powder, baking soda and chopped chocolate. Add in coconut flour. Pour brownie mix into lined square baking tray, drizzle with peanut butter and use a knife or skewer to swirl it through.
Bake for 30 minutes, check and cook for 5 minutes longer if needed. Brownies should look slightly cracked on top.
