Cottage Cheese Banana Muffins

You know I’ll try and add cottage cheese into everything I make!

I’m not calling these muffins ‘high protein,’ because that’s just not accurate - but with three eggs and cottage cheese, they offer more balanced macros than most muffin recipes.

They’re perfect for lunchboxes—make a batch on Sunday to help smooth out the week ahead!


Ingredients


2 over ripe bananas, mashed
3 eggs,
1/4 cup of maple syrup or honey
1/2 cup of Barambah Organics cottage cheese
2.5 cups of spelt flour
1 tsp of baking powder
2 tsp of cinnamon
Optional ~ 1 cup of frozen blueberries or half a cup of chocolate chips

Method

  1. Preheat the oven to 180 degrees C.

  2. Mix the wet ingredients together and make sure the banana is mashed.

  3. Add in the dry ingredients and mix thoroughly.

  4. Bake for 30 minutes, check and cook for a further 5 minutes if needed.
